Michele started meal prepping in February of 2018 when her son needed to follow a strict diet for health and wellness purposes. She prepared all of his meals utilizing a Ketogenic diet meal plan tthat included low carbs, high fats, and moderate proteins. Later, during start of the COVID-19 Pandemic, Michele herself was placed on the DASH (Dietary Approaches to Stop Hypertension) diet designed to lower blood pressure and reduce the risk of heart disease and stroke. These new dietary restrictions resulted in her beginning to meal prep in earnest.
At the time, she was working a full time job up to 6-7 days a week and 18 hours a day. For this reason, meal prepping became a must! She first started by making soups because they were quick and easy, and she could put as many extra vegetables into them as possible. Then, she experimented with other ingredients, adding proteins like chicken and beans, and taking every opportunity she could to add extra veggies into the meal. Michele found that the soup and its many variations like Chicken & Wild Rice with kale, extra carrots, and celery, and Tuscan White Bean, were great options to all of her health requirements.
Every week she researched and tested new recipes as she made family meals packed with fresh vegetables and whole grain. Every new item she tested was created according to its original recipe and then modified for taste preference, allergies, and dietary restriction. Once staff returned to working in the office, she started sharing her soups and meals with her teammates. Soon, she was taking requests for Meatless Meatloaf, ‘Heart Attack Mac and Cheese’ (made with 7 cheeses), and various Soups and Salads customized to the diet and test preferences of the requestor. Suddenly, Michele found herself doing something she loved, and helping folks get and stay healthy! Upon the suggestion of a friend, she decided to formalize her Meal Prep Expertise and Consulting and: Michele’s Marvelous Meals was born right here in Hutto, TX!
