Tuscan White Bean and Lentil Soup

The history of authentic Tuscan white bean and lentil soup is rooted in cucina povera (“poor kitchen”), a traditional Italian culinary philosophy centered on using simple, locally available, and affordable ingredients . This style of cooking transformed humble staples like dried legumes and leftover vegetables into hearty, nourishing meals.

  • Peasant Roots: Tuscan bean soups originated hundreds of years ago as peasant meals.
  • Families relied on what they grew (primarily cannellini beans, lentils, and seasonal greens) to create filling dishes during lean winter months.
  • Ancestry in Minestra di Pane: Many Tuscan Bean Soups are descendants of minestra di pane, an ancient bread soup designed to use up stale leftovers.
  • Local history suggests it may have been named for Lombard laborers working in Tuscany in the late 18th century who prepared the soup to nourish themselves after long workdays.

Authentic Components

While modern recipes vary, authentic Tuscan versions traditionally include:

  • Cannellini Beans: Native to Southern Italy, these white kidney beans are prized for their creamy texture.
  • Soffritto Base: A foundation of sautéed onion, celery, and carrots.
  • Flavor Boosters: A common thrifty tradition is simmering a Parmigiano-Reggiano rind in the broth to add a deep, savory umami flavor.

I make my Tuscan White Bean and Lentil Soup in the Instant Pot and use fresh kale instead of Swiss Chard based on this recipe I found a while back. I use smoked turkey wings or legs because the rich smokey flavor that just makes the soup ‘pop’. While most recipes call for cannellini beans, I have made this with both Great Northern White Beans or Garbanzo Beans. I make this year round and honestly have eaten it for breakfast, lunch, and dinner!

Tuscan White Bean & Kale Soup Ingredients in My Recipe (Note in case of ALLERGIES):  Celery, onion, carrots, garlic, white beans, lentils, chicken broth, kale, smoked turkey wing or leg, parmesan cheese, olive oil, salt, pepper, and thyme.

Tuscan White Bean and Lentil Soup Recipe:

What you need:

  • 1 lb. Ground Pork (Optional)
  • 1 cup yellow onion, chopped
  • 2 garlic cloves, minced
  • 3 -5 sprigs fresh thyme leaves
  • 1 bay leaf
  • 4 cups vegetable broth
  • 2 (15-oz.) cans of great northern beans, drained and rinsed
  • 1 cup uncooked brown or green lentils, rinsed
  • 1 cup water (adjust as needed)
  • 3/4 cup carrot, chopped
  • 2-4 (2-inch) Parmesan cheese rinds
  • ½ teaspoon black pepper
  • ½ teaspoon kosher salt
  • 4 cups coarsely chopped rainbow chard (or kale or spinach)
  • Juice of 1 lemon
  • Parmesan cheese, grated for garnish
  • Drizzle with Extra Virgin Olive Oil (EVOO) to garnish

Instructions on What To Do:

In large stock pot, sauté garlic and onion until translucent, then add pork and sauté until browned. Add spices and stir (as this will bring out the flavors), then add carrot and cook another 3-5 minutes. Add beans, lentils, pepper, salt, and stir to coat. Add broth and water, along with parmesan rinds. Cover and cook on low for a few hours. When soup is flavorful (about 2-3 hours), stir in chard and lemon juice. Cover and cook on low until chard is wilted about 30 minutes. Remove and discard the cheese rinds and bay leaf. Ladle soup into bowls. Sprinkle evenly with parmesan cheese and a drizzle of good EVOO.
